The qualifications
of Vino Nobile of Montepulciano

The Consorzio defines the basic principles
about production, wine-making and trading of this wine.
Production: the vineyards must be only
in the municipal area of Montepulciano and they are comprised between
the 250 and 600 meters a.s.l.
The vineyards is the Prugnolo Gentile,
selection of the Sangiovese Grosso, in one minimal percentage of 70
%. Beyond to the Prugnolo Gentile, we can find the Canaiolo Nero until
to a
maximum of 20 %, or they can concur until to a maximum of 20 % the
vineyards recommended and/or authorized for the province of Siena,
provided that the percentage of white berry vineyards does not exceed
10%. The aromatic vineyards are excluded except the Malvasia of Chianti.
It also comes defined the maximum yield for every hectare and it is
equal to 80 quintals, while the yield of the grape in wine is instead
of 70%.
Wine-making to become Nobile Wine, he
needs 2 years of aging (for example the wine of 2000, we will trading
only in 2003). In this time, the producer are able to decide for this
3 options :
1) 24 months in wood
2) 18 months in wood and after 6 in other container
3) 12 months in wood and after over 6 months in bottle and the other
time in another container |

Grading:
the Nobile Wine must have a minimum natural grade of 12 .
Bottling:
he must be made only in the production area.
Trading:
Nobile Wine of Montepulciano can be only traded in the tipical bottle
called “bordolese” of dark glass with maximum capacipity
of 5 liters and must be closed with cork stopper. |
